Whew! Sooo hard to believe Fall is already here. Are you baking anything? Our house constantly smells like sweet spiced apples, warm pumpkin, and glorious, maple-iced heaven. I mean cinnamon rolls.

Well, if you've been eyeing those fluffy carbs or anything else on our menu, this weekend is your chance to try them and benefit from our big monthly giveaway!

Introducing... drumroll... Free Cookies Friday! Every first Friday of the month we are GIVING AWAY half a dozen cookies with any purchase!! That's a killer deal, people.

Go ahead and order our monster bars (Halloween!) or a caramel apple pie (YUM!) and treat yourself and your loved ones to six huge, melt-in-your-mouth cookies. The first person to get their order in gets to choose which kind it will be for that Friday! (I know. It's a hard choice for me, too.)

Sam is now about 30 months old, and when he's not destroying or coloring on everything in sight he's hilarious! Last week he ran up to me and said, "Hi, my name is SO FAST!" I couldn't agree more. He is really the Baby Boy who loves to help me in the kitchen. The other day he watched me crack an egg and then said, "Yay, mommy! You did it!"

Grant is almost 10 months old and recently began crawling. He follows me everywhere, so you can bet he's in the kitchen for most of the day, too :) He is sooo snuggly and just the sweetest little guy anyone could ask for.

Mmmm. Here is your YUMMY recipe of the month! These bars are the epitome of Fall. So soft, cakey, perfectly spiced, and the pumpkin flavor just shines under all that FROSTING!

Pumpkin Cake Bars with Brown Sugar Frosting

Ingredients:

Bars:

1 1/2 cups all-purpose flour 1 teaspoon ground cinnamon 1/4 teaspoon ground ginger 1/4 teaspoon ground nutmeg 1/4 teaspoon baking soda 1/4 teaspoon salt 1 stick unsalted butter, melted 2/3 cup packed light brown sugar 1 large egg 1 teaspoon vanilla extract 1 cup pumpkin puree

Frosting:

1 stick unsalted butter, at room temperature 1/4 cup light brown sugar, packed 1/2 teaspoon ground cinnamon 1/8 teaspoon salt 1 1/2 cups powdered sugar, sifted 1/2 teaspoon vanilla extract 1 tablespoon milk, plus more if needed

Directions:

Preheat the oven to 350°F. Spray an 8x8 inch baking pan with cooking spray. In a large bowl combine the flour, cinnamon, ginger, nutmeg, baking soda, and salt.

In another medium bowl beat the butter, brown sugar, egg, vanilla, and pumpkin. Add the butter mixture to the flour mixture, stirring until just combined. Pour the batter into the prepared pan.

Bake for 25 minutes, or until a toothpick inserted into the center comes out clean. Set the pan on a wire rack to cool completely.

In a large bowl, use an electric mixer to beat the butter and brown sugar on medium-high speed until light, fluffy, and smooth. Add in the cinnamon and salt. On low speed gradually add in the powdered sugar until incorporated. Add in the vanilla and milk and increase the speed to medium-high. Beat until very light and fluffy. If too runny, add more powered sugar. If too thick, add more milk. Spread evenly all over the pumpkin bars.

Cut into squares before serving. Store in an airtight container at room temperature for 1 day or in the fridge for up to 5 days.

Time: 35 min, plus cooling Serves: 12 large or 16 small bars
