Baby Boy Bakers Pumpkin Cheesecake Bars

Oh my goodness let me tell you, these desserts are over the moon incredible. The pumpkin cheesecake bars are sweet, creamy and cool, perfectly spiced, and sooo rich. And this pumpkin pie. You will NEVER taste a better one, guaranteed!

Can I tell you a secret? Pumpkin pie has never been my favorite. Ahhh! Does that make me crazy? I've always gone for our caramel apple or our chocolate cream pies. Let me tell you, this pumpkin pie may just blow them out of the water, and that is quite a feat!

Baby Boy Bakers Pumpkin Pie

Pumpkin puree is simmered gently with warm spices like cinnamon, nutmeg, ginger, and cloves before being baked to creamy perfection atop our buttery, flaky pie crust. The simmering before hand is unusual in a pumpkin pie recipe but well worth the extra step. It evaporates extra moisture from the pumpkin and concentrates and caramelizes that pumpkin sweetness. The other purpose is to heat up the spices and "bloom" their flavor - free up more of the taste molecules to interact with your tongue. Flavor explosion!

Baby Boy Bakers' Secret Recipe of the Month

This month the secret recipe is none other than Baby Boy Bakers' legendary Pie Crust! So flaky, buttery, and tender, and easier than you'd think. This is absolutely the only recipe I use for butter pie crust. If you give it a try I'd love to see your pictures on the Baby Boy Bakers' Facebook page!

Baby Boy Bakers Flaky Pie Crust

Baby Boy Bakers' Flaky, Buttery Pie Crust

Ingredients:

2 1/2 cups (315g) all-purpose flour

1 1/4 tsp salt

6 T unsalted butter, chilled and cubed

3/4 cup butter flavored shortening, chilled

3/4 cup chilled water

Directions:

Whisk together the flour and salt in a medium bowl. Using a pastry cutter or a fork, cut in the butter and shortening until mixture resembles coarse, pea-sized crumbs. Gently stir in the cold water.

Divide into two dough balls and wrap each in saran wrap. Place in the fridge for at least an hour. (Pie crusts also freeze well. Thaw overnight in the fridge when ready to use.)

To pre-bake a single crust:

Preheat oven to 425 degrees F. On wax paper or well-floured counter top, roll out dough into a large circle, 1/8 inch thick.

Lightly spray 9 inch pie pan with cooking spray. Turn wax paper over into pan or carefully peel crust from counter top and place in pie pan. Trim and crimp edges as desired. Take a fork and poke the pie crust all over.

Line pie shell with aluminum foil and fill with pie weights or a generous amount of dried beans or rice. Bake until pie dough looks dry and is pale in color, 12-15 minutes. Remove weights and foil and continue to bake crust until deep golden brown, 8-12 minutes longer. Transfer pie plate to wire rack and allow to cool completely before filling.

To bake a double-crust pie*:

Preheat oven to 425 degrees F. On wax paper or well-floured counter top, roll out dough into a large circle, 1/8 inch thick. Lightly spray pie pan with cooking spray. Turn wax paper over into pan or carefully peel crust from counter top and place in pie pan. Fill pie with cooled filling.

Roll out top crust and place over filling, pinching the edges of the top and bottom crust together. Trim and crimp edges as desired and slice three vertical slits in top crust to allow steam to escape. Using a pastry brush, wet top crust with milk and sprinkle with 1/4 cup cinnamon sugar. (Don't skip this! It's seriously the best part.)

Bake pie for 12-15 min, until light golden brown. Reduce oven temperature to 350 degrees F, keeping the pie in the oven. Bake for 25-35 min longer, until deep golden brown. Allow to cool completely before slicing and eating.

*Or just follow your filling recipe's instructions. This crust is versatile!
