Here's hoping the holiday stress isn't getting to you already. I have a sad story for you... For our Thanksgiving the Baby Boy Bakers had a whole bunch of family coming for dinner (and I'd NEVER cooked a turkey!), we had an army of pies to make, and I got MASTITIS! Ugh! Not contagious thankfully but I felt awful :P

I was at my OB getting some antibiotics, sitting there waiting and thinking of everything I wasn't getting done, and by the time my doctor came in I was having a miniature meltdown.

Don't be me. Just enjoy the holidays. They're meant to be fun!

The big thing for us this month is... drumroll... Grant's 1st birthday!!! Oh my goodness where does time go?? Our sweet little baby is turning one December 10th, this Saturday! Can you believe it?? I'll be making his cake - our insanely moist and soft vanilla cake with chocolate buttercream. I can't decide between vanilla or raspberry filling. Thoughts? Don't worry, I'll post pics!

To prep for his big day, Mr. Grant got his first hair cut. Of course I bawled like a baby.

Baby Boy Bakers' Secret Recipe - Chocolate Fudge Crinkle Cookies

Baby Boy Bakers' Chocolate Fudge Crinkle Cookies

Here it is. Our super secret, super fudgy recipe for Christmas Chocolate Crinkle Cookies! They are absolutely divine and have been described several times as "The best thing I've ever put in my mouth!" Comment below if you make them!

Chocolate Fudge Crinkle Cookies

Ingredients:

1 1/2 cups semi-sweet chocolate chips or chopped baking chocolate, divided 3 large egg whites, room temperature 2 1/2 cups powdered sugar, divided 1/2 cup unsweetened cocoa powder 1 tablespoon cornstarch 1/4 teaspoon salt

Directions:

Preheat oven to 350°F. Melt 1 cup of the chocolate chips or chopped baking chocolate chunks in microwave in 30 second increments, stirring between each. Alternatively, melt in a double boiler on the stovetop.

Beat whites in large bowl to soft peaks. Gradually beat in 1 cup of the powdered sugar. Continue beating until mixture resembles soft marshmallow creme.

Whisk together another 1 cup of powdered sugar, cocoa, cornstarch, and salt and add to the whites. Beat in the melted chocolate until thoroughly combined. Stir in the remaining chocolate chips or chocolate chunks (not melted). Allow to sit for about 5 minutes. It becomes more stiff and easier to work with if you let it rest. 

Place the remaining 1/2 cup of powdered sugar in bowl. Roll rounded tablespoons of the dough in the sugar and coat thickly. Place on a lightly greased cookie sheet, spacing about 2 inches apart.

Bake until puffed and tops crack, about 8-10 minutes. I always check them at 6, turn the cookie sheet so the front is now in the back, and bake for 2 more minutes. You want the tops to crack and puff but you want the centers fudgy, so err on the side of underdone.

Cool on cookie sheets on wire rack 10 minutes. Transfer to rack; cool. These are great warm, but they're even better when they've cooled and set completely. The texture contrast is unreal!

Time: 30 min Serves: 12 cookies
